Vegan Tacos: Nothing But Plants
Because of a busy schedule, making time for self-care is a MUST. And one tradition I hold as a form of self-care is my beloved Taco Tuesday.
For this recipe, my ingredients are primarily vegetables - I didn’t want to include any mock meats for this taco Tuesday. You ready to give this a try?
Here’s what you’ll need:
Yellow corn tortillas (as many as you’d like)
1 cup sweet potato
1 cup mushrooms
1 can black beans
1 zucchini (small- sliced)
1 squash (small - sliced)
1/2 bell pepper (diced)
Trader Joe’s Chile Lime and Onion Salt seasonings - a few dashes of each will do!
Toppings:
Daiya Cheddar Style Cheeze (to your liking)
Salsa of choice
Trader Joe’s vegan cream cheese
Guacamole or avocado slices - again, as much as you’d like!
Pea microgreens for garnish - if you’ve not tried microgreens, you’d LOVE the extra bit of flavor it gives to this dish!
The Method:
Dice up and combine all ingredients in a skillet (like in this video).
For you tortillas, lightly fry them until their golden color is perfected!
Fill each tortilla up with all of your ingredients and garnish until your heart is content!
